Ingredients

Core Ingredients:

  • Cooked Rice: 4 cups preferably day-old and chilled (jasmine or long-grain rice works best)
  • Ham: 1 ½ cups diced (leftover ham works perfectly)
  • Pineapple Chunks: 1 cup fresh or canned (drain if using canned)
  • Vegetables: 1 cup frozen peas and carrots or your favorite veggie mix
  • Eggs: 3 large lightly beaten
  • Green Onions: 2 stalks chopped, for garnish

For the Sauce:

  • Soy Sauce: 3 tablespoons for savory depth
  • Oyster Sauce: 1 tablespoon optional, for added umami
  • Sesame Oil: 1 teaspoon for a nutty aroma
  • Garlic: 3 cloves minced
  • Ginger: 1 teaspoon grated (optional but highly recommended)
  • Brown Sugar or Honey: 1 teaspoon to enhance the sweetness

Cooking Essentials:

  • Vegetable Oil: 2 tablespoons for stir-frying
  • Butter: 1 tablespoon for added richness
  • Salt and Pepper: To taste

Instructions

Prepare the Ingredients:

  • Dice the ham into bite-sized pieces. Drain the pineapple if using canned.
  • Ensure your cooked rice is cold and clump-free. If using freshly cooked rice, spread it on a baking sheet and refrigerate for 30 minutes to cool.

Preheat the Skillet or Wok:

  • Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of vegetable oil and spread it evenly.

Cook the Ham:

  • Add the diced ham to the skillet and cook for 3-4 minutes, stirring occasionally, until it’s lightly browned and caramelized. Remove and set aside.

Scramble the Eggs:

  • Add a bit more oil to the skillet. Pour in the beaten eggs and scramble them until just set. Remove and set aside with the ham.

Sauté the Vegetables and Pineapple:

  • Add the frozen peas and carrots to the skillet. Stir-fry for 2-3 minutes until tender.
  • Toss in the pineapple chunks and cook for another minute to release their juices and caramelize slightly.

Fry the Rice:

  • Push the vegetables and pineapple to one side of the skillet. Add the remaining oil and butter. Add the cold rice, breaking up any clumps with your spatula. Fry for 3-4 minutes, letting the rice absorb the oil and develop a slight crisp.

Combine Everything:

  • Return the ham and scrambled eggs to the skillet. Toss everything together to distribute evenly.

Add the Sauce:

  • Drizzle the soy sauce, oyster sauce (if using), sesame oil, garlic, ginger, and brown sugar or honey over the rice mixture. Stir well to coat all the ingredients.

Garnish and Serve:

  • Sprinkle with chopped green onions and serve hot. Enjoy your sweet and savory masterpiece!

Notes

  • Egg Rolls: A crispy, savory side that complements the sweet and savory rice.
  • Cucumber Salad: Light and refreshing, it balances the richness of the dish.
  • Spring Rolls: A fresh and crunchy addition to your meal.
  • Miso Soup: A warm and comforting starter.
  • Kimchi: Adds a tangy, spicy element to contrast the sweetness of the pineapple.
